Another opulent weekend on Hayman Island - Belinda Jan 2008
 
I went back for yet another lovely long weekend and had the time of my life again naturally.
I dined in all the restaurants, starting off with The Chef’s Table on Australia day. It was a great night. There was a 10 course meal with matching wines, sitting in the middle of the main kitchen, the head chef Glen Bacon hosted a most memorable evening for 20 lucky people who were able to be part of this “once in a lifetime chance” dinner. After a 4 hour desgustation menu, the night continued with a tour of the famous “chocolate room”, the bakery, the main fridge (bigger than my house) and finishing up in the cellar. With bottles costing over $5000, it was a great feeling to be surrounded by these imported and local wines and champagnes.
The cost, $245 per person, but definitely worth it.

The breakfast is always the best. It is always a great way to start the day with a big buffet, including pancakes, all types of pasties, eggs any style, bacon, fresh fruits, all types of toasts, 6 types of juices, all the list goes on. The cost is $40 per person daily but you are able to get it added into your package if you chose to go this way.

Second night was at The Oriental. Set in the beautiful Chinese Gardens, I enjoyed their signature dish, the twice-cooked Peking duck served with plum sauce. It was just unbelievable service, no wonder bookings are essential!

Third night enjoyed the Seafood Buffet at Azure. $80 pp, I was truly satisfied. With every type of crustacean you could possibly think of, fresh king prawns, oysters Kilpatrick and natural, selection of salads, smoked salmon and much more. Not to mention the desert selection. Sitting outside under the stars was exceptional!

I was met on arrival at Hamilton Island to welcome me back and had my own buggy to bring me to my room upon arrival at Hayman, which I thought was a great touch.

Few changes for the better I noticed:

- deck chairs and tables on the balconies had been freshly lacquered
- sun chairs around the pool were all new and cushioned
- new cutlery and plates in restaurants
- more selection in the min-bar
- carpets were new in the cigar lounge and in and around La Fontaine
- canapés were endless on the launch to and from

Fantastic time, great service, can’t fault the place, although you never seem to see the same faces. Turn over on staff is ridiculous although I will consider going back again next year.
